Enchiladas and Empanadas

I did this chuck on the smoker yesterday. I pulled it off at 140* and grinded for enchilada meat. My wife made them as well as Apple spice and banana chocolate empanadas. Enchiladas just didnt taste right?

We also made some home made enchilada sauce out of the chilis in the picture below? The sauce was great!
If anyone knows what kind of chilis they are let me know, they burn - thanks. db

I believe those would be the "Owmypeepee" chillies.
Why nada on the empanada pics?

Hard to tell from the pic since they are dried. Could be just chili peppers or serranos.

Too fat for any Serranos I ever seen. Maybe Ancho or Pablona or similar. Some of the best enchiladas I ever had was made with leftover comp chili. Just tender up the torts in a cast iron skillet and roll them up with cheese and onyawns. Cover with the chili and a little extra cheese. Yum yum. We like the 50/50 cheddar/velvetter combo for that too. The warden's recipe in the recipe section is real good too. Dont need comp chili on that one.
