We have yellow squash going nuts in the garden and I was looking for new ways to use it and ran across a Squash Pie that sounded good so I turned it into my own version and I'm telling you even if you don't like squash this is a must try! Turned out Fantastic!

Squash Pie
1 c. evaporated skim milk
2 eggs
1/2 c. honey or 3/4 c. sugar
1 tsp. cinnamon
2 c. cooked yellow squash
1 unbaked pie shell
Cube and cook yellow squash in small amount of water until tender; drain and cool. In blender, blend milk, eggs, cinnamon and honey. Add cooked squash (cooled). Blend together 2 to 3 minutes. Pour into unbaked pie shell. Bake at 400 degrees for 10 minutes, then 350 degrees for 35 more minutes or until set. Cool, then refrigerate until COLD.
 
Larry, one piece of your pie contains 1/3 cup of squash, which would certainly equal one vegetable serving for the day. Now all you need is four more pieces of vegetable and/or fruit pies to satisfy the recommended five daily servings. :idea:

That looks really good. We've made pies with winter squash (butternut or acorn squash) but I never even thought about using summer squash.
