Cool way to Cook (Cochon de Lait, Mansura Louisiana )

I'll eat hogs head cheese, but I dang sure ain't making it.
My ex-grandmother in law used to make it in Georgetown
SC..the night before Christmas eve, the clan would gather
at her place and 3 pigs all night....she made the hottest
dang pepper sauce you could imagine...made me laugh
cause she was about 70 years old.

Her name was Twilight Marlowe...what a great southern name..
great lady and a fantastic southern cook...she passed about
5 years ago.
 
Down here we got 2 kinds hog head cheese; whole head & non head, The non head is made with pork meat like shoulder or butt (no eyes & other stuff). I like the non better.

BTW Mansura is pronouced as 1 word; man-sir
The "A" is silent on the end
