Looks good JB.. Water has a higher density than smoke or hot air...

loves me some rice and gravy, I grew up on it.
JB, I gave almost half of my smoked chuck to my
neighbor who is a former restaurant cook....he made
a roast beef hash out of it that rocked...I know he used
potatos, onions and siracha sauce....didn't get any gravy from
him though.

If I never learn anything from this site, It's worth signing on just for your entertaining video's - and they are informative as well. As for your cooking time question the answer above is right - it's like blowing cold air on a burned finger vs running cold water on it - water much more effective.
