Christmas Beef Wellington

I'm inspired now Griff. I went out to the butcher and picked up a 2 lb angus tenderloin to do this tomorrow night along with scalloped potatoes and saute'd brussell sprouts.
 
I might get some strange looks from the in-laws, but I'll see what I can do.

Have you ever done beef wellington with the tenderloin cut and wrapped in indivdual portions? I'm wondering if this approach would be easier for serving.

Individual portions I personally would not do. I just think it would be harder to control the internal temp. Nothing worse than a over done wellington.

Yeah, I hear ya. I got a not so funny look from the wife when she heard that the beef was $12.99 a lb!!!
