Pound the chicken breasts and start them in a skillet, be generous with the olive oil and garlic. Get them browned up and pour off most of the olive oil, add the sauce then cover and simmer for 25-30 minutes. Put about four ounces of Mozzarella on top then cover for a minute or two and melt. Plate it with a side of spaghetti and dig in, don’t forget the grated cheese.
