Breakfast

I haven't had a good breakfast in a while, been eating nothing but cereal. So I wanted hashbrowns for breakfast and we happened to have to leftover baked potatoes and one big sweet potato. So I cubed them up and diced up a half a red onion, little garlic and salt and pepper. Then I decided I wanted eggs too, but not fried or scrambled. So I mixed 5 eggs up and poured the potatoes and eggs in a pie dish and covered with mexican blend cheese. Popped into the oven for a few then finished under the broiler. Wow pretty good if I may say so myself!!!

That looks and sounds good.

A variation of that's on the menu here this morning.

Gonna start with some JD Sausage to get some pork fat to cook the tater's in. Then just about what you did. May add some salsa to the whole mess too.
