Wanting to give BBQ a break, she asked for something Cajun.
I found Crawfish Magnifique in Mirliton Piroque by Paul Prudhomme. I don't know what the hell a Mirilton is so I used browned eggplant slices covered with the Crawfish sauce.
The beans are a killer. They are from a New Orleans Restaurant called 'Stephen and Martin'. After sauting bacon, 1 1/2 sticks of butter are added to the pan (in the bacon fat) to cook the onions, beans, mushrooms, brown sugar, etc. The beans were fresh picked from the garden.
Started with Shrimp and Clams. The cocktail sauce had lemon juice in it with a couple Tbs of clam broth.
