Baked Potato

Did a baked potato with fixings and asparagus last night. Got out some sharp cheddar cheese, scallions, butter, garlic, and sour cream.

Just before the potato was done I fried the asparagus in butter and garlic.

Let it sit while building the potato, start with butter and sour cream

Add scallions

Some cheddar cheese

That looks really good!! I have a question. When you bake the potatoes, do you use foil or just put them in the oven on the rack or a baking sheet? I have seen recipes call for both. My mom always wrapped them with foil but when I make my twice baked potatoes, I just rub them with vegetable oil and cook on a rack in the oven.
 
Thanks for the tips! I am going to try the olive oil and kosher salt. I do prefer the unfoiled ones I've done lately since trying the twice baked potatoes.

How do I keep the garlic from falling through the grates? :)
 
OH yeah there is nothing to compare to a potato cooked in the coals. I remember those from camping trips as a child. I'm gonna have to throw a few on when we have our little recreational fires in the summer........or throw them in the firebox when we do our next cook.
 
You know I have stop looking at pictures of food like this before I go to bed.

It looks amazing and it was all I could think about last night.

Good looking 'taters !! Im also a non foiler, although, I may try the wrapped evoo/kosher salt thing...
