Anyone grow their own Chile peppers?

First year for me.
Just wondering when you try and "kill" your plants in order for them to produce more fruit and become hotter. My japs are just starting to produce a couple fruit that are prolly 3/4 inch long. The same with the Tobascos.
Anyone?
 
From what I hear...right when they start to produce fruit, you stop watering them so often, and start snipping all the new growth. This makes the plant "think" that it's dying and it puts all it's efforts into the existing pods in order to yield a better seed....to fight another day. They say you won't get the most out of your pepper if you don't try and kill them.

I'm just not sure when to do this.
