OK I just completed my first smoker and decided I would do a simulated smoking today.

I am using about 8lbs of lump charcoal and some oak chunks I got from my neighborhood grill store.

I am about 30 min in and am going back out to try to regulate my temps. Is there anything I need to be sure to do?

I looks like I did not soak my wood long enough. I do not have anymore smoke.
How long do you guys soak and do you use chunks or chips or what?
 
Soaking your wood is not required. You want to see thin blue smoke. If you see white billowing smoke your fire is not right and your food will taste bitter. Sounds like your doing fine.
