Regular steel is fine. I assume you are talking expanded metal. You can use expanded Stainless. Or if you want to get really heavy-duty, fab you racks out of 1/4" rod.

I am building mine out of 1" angle iron for the frame and #9 expanded metal flattened for the grate surface.
