I use my smoker all year round. I live in the north east united states. It is cold and windy the majority of the year. This usually makes me want to smoke more meat for some reason. I have found that getting a bread pan of play sand or multi purpose sand covered with foil helps maintain temperatures in the smoker. Its like the pizza stone deck method. It takes energy to heat up the thermal mass but once it gets to temp it will help hold and maintain the temp inside the smoker. This will result in an even, and timely cook for the meat.

I wanted to illustrate this while i made this page. Feel free to stop by and watch this method while I smoked a turkey. I use images and video here also.
